Grains of Paradise - DISCONTINUED
Grains of Paradise (Aframomum melagueta), which is also known as Guinea Pepper and Melagueta Pepper is an aromatic seed used in the cooking styles of west and north Africa. A herbaceous, perennial native to the swamps along the west African coast its trumpet-shaped, purple flowers develop long pods containg the reddish-brown seeds.
Grains of Paradise have a flavor reminiscent of a cross between black pepper, ginger and cardamom. Before pepper was widely available, this spice was used in Europe as a substitute for black pepper in cooking and also to flavor beer and other alcoholic beverages. Today, it is little used in cooking outside of Africa and certain parts of the Caribbean. As a result of Grains of Paradise being used in Samuel Adam's Summer Ale, there is a considerable new interest in the spice, especially among home brewers. Try mixing the Grains of Paradise with Tellicherry Black Pepper in a pepper grinder for use on steaks and other dishes where you would normally use black pepper. Your family and guests will love the aromatic twist this spice gives your cooking.
