Juniper Berries
Juniper berries (Juniperus communis) are picked from an evergreen shrub. This shrub or small tree is found throughout the Northern Hemisphere. The blue-black seed cones, commonly known as "juniper berries", are relatively new to U.S. cooking, but have long been a staple of European dishes. The astringent flavor of the dried juniper marries well with seasonings, sauces and stuffing for meat, game and pork. It is often used in sausages and pâtés, and in sauerkraut. The berries should be crushed to bring out the flavor. Juniper also flavors gin as well as other spirits such as schnapps. In fact, the word "gin" is derived from the French word for juniper berry, "genièvre." The Slovak national alcoholic beverage "borovicka" is flavoured with juniper berry extract. In Finland, juniper is used as a key ingredient in making "sahti", a traditional Finnish ale.
