Potato Pancakes with Juniper Berries

Ingredients:

• 1-1/2 lb. potatoes
• 2 tsp. Juniper Berries
• 1/2 tsp. Pure Orange Extract
• salt and pepper to taste
• butter or oil

Directions:

Peel and grate potatoes. Polverize or grind juniper berries in a coffee grinder. Add orange extract and juniper berries to grated potatoes. Divide potato mixture into six flattened heaps and fry in butter or oil until golden brown and crisp on both sides. remove from pan and drain on paper towel. Can warm (uncovered) in a low oven. Serve with sour cream as an for accompaniment with steaks or chicken.

Chocolate Cake, Orange

Ingredients:

Cake:


• 1 box devil's food cake mix
• 1-1/4 cup buttermilk
• 1/2 cup oil
• 3 large eggs
• 3 tsp. Pure Orange Extract
• 1 tsp. Mexican Vanilla Extract, Pure
• 2 Tbsp. grated orange peel
• 1 cup mini-semisweet chocolate chips


Frosting:


• 4 sticks softened butter
• 16 ounces Marshmallow Fluff
• 2 cups confectioners sugar
• 2 Tbsp. Pure Orange Extract
• 2 tsp. Mexican Vanilla Extract, Pure
• 4 Tbsp. grated orange peel

Directions:

Pre-heat oven to 350F. Grease and flour two 9-inch rounc cake pans. beat and mix cake mix, buttermilk, oil, eggs, orange and vanilla extract and grated peel until throughly mixed. Fold in 1 -1/2 cups chocolate chips. Pour into pans. Bake 30-35 minutes or until a wooden tooth pick inserted in the center of cake comes out clean. Remove from pans and cool on wire racks.

To prepare frosting - beat butter and marshmallow fluff until creamy. Add confectioners sugar, vanilla extract, orange extract and orange peel and beat until smooth.

place one cake layer on cake plate and frost completely. Top with other cake and frost completely. Spread remaining frosting on sides of cakes to blend the cakes together as one. Sprinkle cake with remaining 1/2 cup of chocolate chips.

Chutney, Orange Pineapple

This chutney goes well with chicken, pork and fish.

Ingredients:

• 3 cups canned or fresh pineapple chunks, drained
• 1-1/2 cups raisins
• 3/4 tsp. Pure Orange Extract
• 1/2 cup light brown sugar
• 1/4 cup cider vinegar
• 1/4 tsp. ground Ginger Crystallized & Ground
• salt and pepper

Directions:

Mix all ingredients in a 2 quart sauce pan. Heat over medium heat to a boil then reduce heat to simmer. Cook until liquid is reduced and becomes a light syrup. Remove from heat and serve.
