Sesame Seed - Various
Sesame (Sesamum indicum) is one of the oldest spices and oil seed crops. A 4000 year old drawing on an Egyptian tomb shows a baker adding sesame to his dough. Delicately flavored, it can be used in more or less unmeasured amounts in any dish you use chopped nutmeats. The precise origin of sesame is not known. Many wild species grow in sub-Sahara Africa, India and the Sunda Islands of Indonesia. A valuable oil seed and food crop, sesame was introduced into China, Egypt and Japan and subsequently brought to other warm countries. Sesame was first brought by slaves to North America and the Caribbean. Called Benne Seeds, the name is still used in some parts of the South.
Sesame comes in a variety of colors from creamy-white to charcol-black. Silver Cloud sells the cream colored, black and toasted seeds. The cream colored seeds are fifty percent oil and an excellent source for cooking oil. They can be toasted to intensify their sweet nut-like flavor. Black sesame is primarily used on baked goods and vegetables to add visual appeal and flavor.
