Chef Paul Prudhomme made Blackened Seasoning popular. A hot and flavorful coating, it was originally used to add flavor and help retain the moisture in fish. Our Blackened Seasoning, however, is equally good on grilled or broiled lamb chops, steaks, and pork. To blacken fish, on low heat, melt about 3 tablespoons of butter or margarine in a non stick frying pan (enough butter to cover fish and the bottom of the pan).
