Garlic Powder

Garlic (Allium sativumis) is a member of the lily family. Garlic grows in a bulb that consists of a number of cloves held together layers of skin. Almost every cuisine uses garlic. It is indispensible in Chinese, Italian, and Mexican foods. Besides tasting great, garlic's good for you, too. Researchers believe that garlic can bolster the immune system, lower blood pressure and prevent heart disease. Garlic Powder provides the flavor, but not the texture, of fresh garlic when added to most foods.

Garlic Powder can be used to replace fresh garlic when you are out or when you need to save time and want to avoid the mess of chopping garlic. It is strong and one-eighth teaspoon is equivalent to one clove of fresh garlic. Garlic

Garlic (Allium sativum) is a species of onion and a close relative of the shallot, leek and the chive.  A small, hardy bulbous perennial plant, it has been used throughout recorded history for both culinary and medicinal purposes. Ancient Romans believed garlic has magical properties and sailors carried cloves of garlic with them to prevent shipwrecks.  Medieval physicians used garlic as a disinfectant and a cure for numerous illnesses. 

Garlic is thought to have originated in Western Asia.  It grows wild in Egypt, Italy and most of the countries surrounding the Mediterranean basin.  Garlic has a characteristic pungent and spicy flavor that mellows and sweetens considerably when cooked.  It is almost odorless until it is bruised or cut, at which time an enzymatic reaction occurs that produces Allyl Disulfide.  While related to onion, garlic has a much harsher flavor and aroma.   

A bulb of garlic, the most commonly used part of the plant, is divided into numerous fleshy sections called cloves. The cloves are used as seed, for consumption (raw or cooked), and for medicinal purposes. The leaves, stems (scape) and flowers (bulbils) on the head (spathe) are also edible and most often consumed while immature and still tender.  The papery, protective layers of 'skin' over the bulb are the only parts of the plant not generally consumed. 

Like onion, garlic is not generally eaten on its own, but is typically a food ingredient.  The flavor of garlic enhances most foods and it is used to season meat, poultry, seafood and vegetable dishes in Indian, Oriental and most Mediterranean cuisines.

Oysters, Curried Fritters

Delicious old recipe from New England.

Serve as a appetizer or as a side for a main course.

Ingredients:

  • 2 cups sifted all purpose flour
  • 2 tsp. double-acting baking powder
  • 2 tsp. salt
  • 1 1/2 tsp. mild or hot Curry
  • 1/4 tsp. Garlic Powder
  • 1/8 tsp. table grind Black Pepper
  • 1/2 tsp. Onion, Minced
  • 2 eggs, lightly beaten
  • 1/2 cup milk
  • 1/2 cup oyster liquor
  • 1 cup frozen or drained oysters
  • Celery Salt

Directions:

Sift first 7 ingredients into a mixing bowl. Combine next 4 ingredients asnd stir into the dry ingredients. Chop oysters coarsely and blend wioth mixture. Drop one teaspoon batter at a time into deep fat or vegetable oil pre-heated to 375 F. Cook for 3 minutes or until brown on all sides. Sprinkle with celery salt. Serve on toothpicks as a hot hors d' hoeuvre.

Yields approximately 50 fritters.

Clam Dip with Sour Cream

Always a favorite at parties.

Ingredients:

Directions:

Combine the first 9 ingredients and mix well. Turn into an attractive small bowl. Garnish with paprika. Place on a large plate and surround with assorted crackers.

Garlic Cheese Toast

This garlic cheese toast recipe makes a great afternoon snack or accompaniment with your favorite Italian meal.

Ingredients:

  • 2 slices thick bread
  • 2 Tbsp. butter
  • 1 tsp. Garlic Powder
  • 1 tsp. parsley flakes
  • 1/4 cup of grated parmesan cheese (or krafts italian cheese)
  • parchment paper

Directions:

Preheat oven to 400 degrees. Melt butter in a small bowl (microwave for 20 seconds). Mix in the garlic powder. Place the slices of bread on parchment paper. Brush on the garlic butter mix on the slices of bread. Add Parsley, then add the cheese (about 2 tablespoons of cheese on each slice of bread). Bake in oven at 400 degrees for about 5 minutes or until cheese is melted. If you want the toast to be crispier, leave it in the oven an extra minute or two. Serve as a side dish or an appetizer.
