We recommended only those who like a great deal of heat try Silver Cloud's Habanero, Chili Powder (Capsicum chinense). This is very hot stuff and typically, 1/8 teaspoon is more than enough to add a great deal of heat to a dish of four to six servings.

Most habanero peppers are between 200,000 and 300,000 Scoville heat units, which makes them among the hottest of all chilies. While extremely hot, this chili does have a fruity, citrus-like flavor. Its high heat has resulted in it being very popular in a wide range of applications, especially hot sauces.

The habanero like all capsicums is native to South America and was rapidly diseminated around the world upon its discovery by Europeans. By the 18th-century, taxonomists mistook China for its place of origin and called it "capsicum chinense" - the Chinese pepper. Members of the same species, the Scotch bonnet and habanero are often confused. While they share similar heat levels and a thin, waxy flesh, they are two different varieties.

Habanero Pumpkin Cookies

Preheat oven to 350F

Combine pumpkin, sugar, sour cream, egg and vanilla extract and mix well. Sire in raisins and walnuts. Sift the dry ingredients together and stir into pumpkin mixture until just mixed. Drop tablespoons of dough onto light greased cookie sheet. Bake for 15-minutes or until lightly browned.

  • 3/4 cup canned pumpkin
  • 3/4 cup light brown sugar
  • 1/2 cup sour cream
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 cup seedless raisins
  • 1/2 cup chopped walnuts
  • 1 1/2 cup flour
  • 1 teaspoon Silver Cloud - Ground Cinnamon
  • 1/2 teaspoon Silver Cloud - Ground Ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon  salt
  • 1/2 teaspoon Silver Cloud -  Habanero Ground peppers
  • 1/4 teaspoon Silver Cloud  - Ground Allspice
  • 1/4 teaspoon Silver Cloud - Ground Nutmeg

1.Preheat the oven to 350 degrees.

2.Combine the pumpkin, sugar, sour cream, egg, and vanilla and mix well.

3.Stir in the raisins and walnuts.

4.Sift the dry ingredients together. Stir the dry ingredients into the pumpkin mixture until just mixed.

5.Drop a tablespoon of the dough onto a lightly greased cookie sheet.

6.Bake for 15 minutes or until lightly browned.

Vanilla bean and extract prices have increased significantly this year. This is due to a smaller than expected crop in Madagascar last year. This was aggravated by early picking and the vacuum packing of uncured beans. While short term the news is not good, the 2016 flowering was excellent and we anticipate a good harvest. This may lead to some price softening, but with the strong demand for vanilla we have seen it is hard to say how much relief we will see. We will know more later this year as new crop, cured beans become available. Best case we do not anticipate any significant reduction in price before the end of the 1st quarter of 2017.
